HOW TO BAKE LIKE LUCY : Lucy in SlotoCity

Full recipe:
6-INCH VANILLA CAKE:
3 eggs
1+1/4 loving cup / 300g sugar
135ml oil
1+1/3 cups / 230g flour
2 tsp baking powder
180ml milk
1 tsp vanilla
SWISS MERINGUE BUTTERCREAM:
8 egg whites
2 + 1/8 cups / 500g sugar
1 + 1/4 cups / 500g butter
1 tsp vanilla
METHOD:
CAKE
– In the stand mixer, crunch the eggs and sugar together
– When it’s “milkshake” consistency, add the oil and vanilla and go on to crunch
– Combine the baking powder and flour
– Gradually add the flour and milk, alternating betwixt the two
– Once combined, evenly distribute into 2 baking tins which are fully lined
– Bake at 320F for 45-50 minutes until cooked through
BUTTERCREAM:
• Combine the egg white and sugar in a mixer bowl
• Place onto a pan of simmering water and heat until 65°C (until the sugar has
dissolved)
• Whisk at full speed for at least 5 minutes until a thick meringue has formed
• Leave to cool completely
• Turn the mixer onto a medium speed and slowly add the pieces of softened butter
• Leave the mixer on medium until the buttercream starts to form
• Turn the speed up high to incorporate all the left over meringue and butter
